Depends on the intensity, duration & goal of the ride. Mainly just water for rides up to 2 1/2hrs, riding at sweetspot & below. Nutrition added for higher intensity and/or longer duration. If training it tends to be mainly "proper" food; dates, 1/2 bananas, decent unprocessed bars, etc. High intensity training and all racing on energy products; powder and/or gels.
Oh, and plenty of double espressos.
